I made the most wonderful (super-easy!!) Brocolli Cheese Soup yesterday, thanks to a recipe I found over at
Kathryn's Kitchen. Tonight, I turned the leftovers into a wonderful chicken bake for supper. In a 9x13 I layered cooked white rice, then chicken breasts, poured the leftover soup on top of that, and finished with some dry stuffing (bread crumbs) for crunch. Baked for an hour, and voila...wonderful.
